With an Egyptian guest chef in PARKROYAL Hotel, we are now assured that the taste of Levant would satisfy diners whilst giving them feasting options accompanied with classy services at reasonable prices. Attracting fans of Egyptian, Mediterranean and Middle Eastern cuisine, Chef Ayman Ibrahim’s creations are available at on ala carte, set and room service from now until the 31st of October.
Featuring 37 items, the selection showcases healthy and delicious starters and appetisers; as well as tender grilled meats and kebabs, to exceptional vegetarian dishes and authentic Middle Eastern desserts. Starting with the starters, those comforting soups and amazing dips to go with Arabian bread would very quickly trigger the saliva gland to welcome their mains.
Starting with appetisers like the Taboulah (Parsley and mint salad tossed with bulgur wheat)and Warq Einab (rolled vine leaf with rice) really puts a good start to the meal. There are absolutely plenty of fabulous versions available in town but to sink your teeth into authentic ones is a great Middle Eastern dining experience.
Also on the appetizer spotlight, the Hommous, and the Falafel (chickpea croquettes serve with Tahinah) , both are fantastically done by their award winning Chef Ayman.
The main course are served with rice, with choices like the Roz Boukhary (bukhari rice) and Roz Saiadiah (fried onion rice), and pairing that with delicious mains like the Lamb Kabsah, or Kofta (BBQ lamb meatballs). Or if the gaminess of lamb is not your thing, other dishes to offer would be Shish Tawook (skewered chicken cubes) and Dajaj Ala Elfaham (grilled spring chicken). Otherwise, sea harvest could be your next protein source for the meal- Samak Mashwi (pan-fried salmon fish fillet glazed with tahinah) and Jambary Mashwi (grilled prawns with saffron sauce) .
My personal favourite has got to be the Bamiah Bil Lahm Ejal (stewed okra with beef and tomato)– a flavourful and juicy meat stew with hearty tangy from tomato and at the same time light with presence of okra. Because of the perfect balance of meat distribution and tender stewing, this one is tough to reject.
To complete the meal, desserts are prepared traditionally. Mouth watering sweet finishing showcases Kashul (almond pudding), Basbosah (semolina cake), and Assorted Baklava (4 types of nuts in filo pastry).
Chef Ayman Ibrahim hails from Egypt and has 25 years of experience in the culinary field. His specialities include Middle East, Mediterranean and traditional Arab cuisine. The Middle East Specialities Set Menu includes one appetiser, one soup, a choice of Mandy (RM88 nett), Dajaj Kabsah (RM85 nett) or Samak Saiadiah — deep-fried fish served in pungent sauce (RM85 nett) and one dessert. It is available from 12:00pm to 12:00am daily.
