Cooking and meal prepping can be a hassle at times but if you want to serve the best nutrition then nothing beats home cooking dishes. It is a great way to eat healthier and more affordable. But the hassle of cleaning and washing could be another disagreeable thought at times. To offer a break from washing a sink full of pots and pans, why not cook with the oven? This is a dish inspired from my recent visit to D’ark in Bangkok and with a little tweak of ingredients; this could be a good starter or even a great sharing portion if you are throwing a party.
I’m remaking their beetroot salad and although it is simplicity personified, cooking still scream of effort to many people. Fret not; all you need in this recipe is your oven, and a baking pan. You can eat right from the pan to minimise more washing but I love plating my dishes so I don’t mind washing an extra plate. LOL.
The recipe is basically super simple – Baby beets simply roasted to bring out their sweetness need just the barest drench of olive oil and a sprinkling of fresh herbs.
• 10 baby beets each 1 to 1 1/2 inches in diameter unpeeled all but 1 inch of tops trimmed, rinse. (Can be subsitude with 1 large beet of approximately 450g, peeled and cut into 1 inch cube size.
• 2 large fresh sage sprigs, plus additional sprigs for garnish, and some thyme
• 1 tablespoons unsalted butter
• 1/4 cup olive oil
• 1 tsp white truffle oil (optional)
• Kyubu orange yogurt Japanese style Cheese Cubes (can be replaced with mild cheddar cheese)
Serve this with dollop of Greek yogurt, some orange cuts for the extra zesty aroma and a grate of orange zest.
Preheat oven to 200°c. Place beets in roasting pan. Melt butter and add herbs onto the beets. Drizzle olive oil to coat generously and thoroughly before covering pan tightly with foil to roast for about 30 minutes. The new Panasonic Electric Oven NB- H3800SK (RRP: RM 669) comes with double insulated glass door to keep the temperature high internally but does not cause a burn when accidentally touching the door from the outside.
Sprinkle a dash of sea salt, let it cool and serve either on plate with or without garnishing with additional thyme sprigs or directly from the roasting pan. Also drizzle truffle oil to complete this amazing appetizer.
